Carrots

Carrots are among the most popular and one of the easiest veggies to grow indoors. You should use a small, deep container or pot to plant the carrot seeds in the moist soil. Keep the soil moist for delicious results. Carrots are super fun veggies to plant. It takes two to three weeks for the carrots to mature, then they can be used in any tasty meal. It can be simple like roasted veggies or it can be more complex and challenging like smokey carrot dip.

Lettuce

Everyone loves a good salad and you can grow your very own lettuce. Use a pot that is a few inches wide and deep. Plant the seeds in moist soil and after it grows around six inches it is ready to be harvested. Pick the leaves off the center of the plant and enjoy the freshest salad you will ever have! With fresh lettuce, you can make almost any dish from a chicken lettuce wrap to a vegan Mediterranean salad.

Scallions

Scallions take up practically no room. It is one of the simplest veggies to plant; all you need is a tall glass cup. Put a whole bunch of new, small scallions with the root in the water. As it grows, chop the top green part off. Leave about an inch and the roots and it will continue to grow. Then do the whole process again, you will never run out. You will also never run out of recipes to try with scallions.

Herbs

Fresh herbs always liven up a dish. Herbs are different plants including oregano, basil, rosemary, thyme, parsley and chives. Plant each individual herb into a draining cup with moist soil. Continue to water and when the plant sprouts pick the leaves off the center. You can use herbs in many ways like in a dressing.
